This week (yes, I know it is already Tuesday) we will have the following:
Tuesday - fried eggs & english muffins
Wednesday - Chipotle Tamale Pie (in freezer)
Thursday - Red Pepper Soup (in freezer) and 5 minute artisan bread (see http://www.artisanbreadinfive.com/)
Friday - Pork Tenderloin, Rosemary Roasted Potatoes, Roasted Zuchini/Squash Mix
Saturday - Pork Sandwiches (leftover tenderloin on english muffins with tomatoes, cucumbers, pan sauce and a bit of mayo)
Sunday - Red Hot & Blue BBQ at Grandma Pat's for our Birthday meal
This meal plan requires a mini shopping trip just to pick up some tomatoes, cucumbers, zuchini, potatoes, and some milk. I'm hoping to keep it a fairly low cost trip but the savings won't be so great since I don't have any coupons for produce or organic milk.
